This cookie is a family favorite. It’s bite-sized, chewy and the perfect amount of sweetness to satisfy a sweet tooth without being overly sweet. This is the type of cookie that you can make the night before and it tastes just as good the next day. Great to bake and take. The base of this cookie is ideal for many different additions… dried cherries, dried cranberries or pecans would be delicious. Today I used dates.
makes about 6 dozen small cookies
1 cup shortening
1 1/2 cups sugar
3 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package 8oz. dried chopped dates (may substitute whatever you have on hand, i.e. dried cranberries, dried cherries or pecans)
Blend shortening and sugar until combined. Stir in eggs and mix well. Add flour, baking soda and salt until dough is formed. Mix in dates and form into heaping teaspoon sized – yes, I said teaspoon sized – balls and bake on an ungreased cookie sheet (or line with foil) at 375 for 8-10 minutes.
