Baby Spinach Salad October 4, 2011

This salad is one of the few that my guys will actually eat as a side dish. It’s fresh, light and completely satisfying.

Baby Spinach Salad
1/4 cup extra-virgin olive oil
zest of one lemon
zest of one orange
Juice of one lemon, about 1 tablespoon
Juice of segmented oranges, about 2 tablespoons
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 bag baby spinach leaves
2 oranges, cut into segments
1/4 cup almonds, sliced
Freshly grated Parmesan cheese

Begin by segmenting the oranges. Cut the peel off of the oranges. Cut the orange segments out of the membranes over a small bowl. In a large bowl, mix oil, lemon zest, orange zest, lemon juice, orange juice, honey, salt, and pepper. Add the entire bag of baby spinach leaves and toss. Top with orange segments, almonds and Parmesan cheese.

    really, it looks delish.

  3. This looks and sounds wonderful- I love spinach salad…period. My hubby thinks it has to be dripping in bacon grease though.
