Red Beans and Rice October 28, 2011

If you’re looking for an easy weeknight dinner that you can throw together in less than 30 minutes, here it is! Red Beans and Rice falls into the category of comforting, warm winter dinners. Make sure you serve it with a pan of warm, buttered cornbread – cause we all know ain’t no comforting, warm winter dinner worthy of being called comforting without a pan of warm, buttered cornbread.

Red Beans and Rice

2# ground beef
1 medium onion, diced
2 TBL. chili powder
1/2 tsp. black pepper
1/2 tsp. garlic salt
1 tsp. seasoned salt
2 cups water
1 can red kidney beans
1 can stewed tomatoes
1 cup quick cooking rice

In a large cast iron skillet, brown meat and onions. Add chili powder, black pepper, garlic salt, seasoned salt, water, red kidney beans and stewed tomatoes. Bring to a boil. Add rice, cover and cook over med/low heat until rice is cooked through. Serve with warm, buttered cornbread.

  1. Gosh that looks wonderful! And I love meals that can thrown together quickly. In fact, I depend on them! As for that warm, buttered cornbread…yum 🙂

    Great recipe. We’ve reciently found Zatarans red bean and rice and really like it but the daughters tummy does not. We’ll have to give this a try.
